Moussaka. The Greek version, not the approximation.

You have probably had moussaka before. Probably a version that was fine. This is the version that makes you understand why it became a Greek staple in the first place.

Jars Meze moussaka: layered beef mince, roasted aubergine and béchamel, baked golden in Bath.

Beef and aubergine, properly layered

Moussaka is built in stages. Seasoned beef mince, roasted aubergine slices, a thick béchamel that sets in the oven. Each layer has a job. Get the order or the ratios wrong and it collapses into something vaguely resembling shepherd's pie. Done right, every forkful holds together.

Slow-baked, not rushed

The version you get here is baked until the béchamel top turns golden. Not pale. Not reheated. The kitchen puts time into it, which is the only reason it tastes the way it does.

A Greek classic, done without shortcuts

Every Greek household has a version. Grandmothers argue about the right ratio of meat to béchamel. The restaurant version at Jars uses proper Greek seasoning, not a guess at it.

What comes with it. What to order around it.

Moussaka is a proper main course. Start the table with tzatziki, tirokafteri, and pita. Add a Horiatiki or a side salad. If the group is hungry, a few meze plates between the dips and the mains means everyone arrives at the main event in the right mood.
